Recipe: Carb-Friendly Spaghetti

Spaghetti...carb-friendly...not usually in the same sentence.  
Guess what?  They can be! 


Substitute pasta with squash and you get carb-friendly.  Sound gross?  Try it before you diss it!


Spaghetti Squash Nutritional Facts

1/2 cup cooked
4 (net) carbs
21 calories
Good source of Vitamin C, B6, manganese, niacin, panthothenic acid, and potassium


How to make Spaghetti Squash Pasta

  1. Cut the squash in half lengthwise.
  2. Scrape out seeds and pulp just as you would a pumpkin.
  3. Bake the rind, side up for 30-40 minutes at 375 degrees F or microwave 6-8 minutes.
  4. When done, use a fork to scrape out the 'meat' of the squash.  As it scrapes out, it will look like angel hair pasta.
  5. Add spaghetti or alfredo sauce just as you would to pasta.
